Beef

  • 1.3kg beef mince

Other Ingredients

  • 40mls oil
  • 8 eggs, lightly beaten
  • 1.2kgs cooked rice
  • 10g chicken booster
  • 5g salt
  • 5g sugar
  • 120g brown onion, finely chopped
  • 70mls oyster sauce
  • 40mls dark soy sauce
  • 200g green onions (shallots), finely sliced on the diagonal

Preparation

  1. Heat half the oil in a wok, over high heat. Add beef mince. Cook in batches for 5 minutes, breaking up with the back of a wooden spoon, until brown. Drain and set aside.
  2. Reduce heat to medium, add remaining oil, add eggs and cook for 30 seconds. Add rice, stir to coat rice in egg.
  3. Add chicken booster, salt, sugar and brown onions. Return beef to pan with oyster sauce and dark soy sauce, stir until well combined and heated through.
  4. Serve garnished with green onions and with stir fried vegetables if desired.
